Beetroot or Kale Hummus

Ingredients

For Kale Hummus

  • 1x Tin of Chickpeas - save the aquafaba (chickpea water)

  • 60g Kale (can be any cavelo nero, curly or red russian - quick blanched in hot water till soft, cool in cold water and squeeze the excess water out)

  • Half a lemon - juiced

  • 1 Clove of garlic

  • Few Mint Leaves (optional)

  • 2 Tablespoons Tahini

  • Salt and Pepper to taste


For Beetroot Hummus
Instead of kale replace with 60g cooked beetroot (can be boiled/roasted/already cooked from a packet)

Method
Put all ingredients into a blender or food processor, add the chickpeas water little by little and blitz it till your preferred consistency.
